Egg Roll In A Bowl


Ingredients 1 lb ground turkey (I used 99% lean)

1 Tbsp sesame oil

1 tsp minced garlic

2" fresh ginger, grated

14 oz bag coleslaw mix

1/4 cup low sodium soy sauce

Sriracha to taste

2 eggs (optional)

1/2 cup thinly sliced scallions

Directions:

  1. Heat oil in a skillet over medium high heat. Add ground turkey and brown, breaking up into small pieces

  2. Add garlic and ginger and cook for 1 minute

  3. Add coleslaw, cover and cook for about 3 minutes until soft

  4. Add soy sauce and sriracha and cook for 1 minute

  5. Divide into 4 equal portions

  6. If using egg, scramble and cook. Divide evenly between the 4 servings

  7. Top with scallions
