Ingredients:
2 lbs ground chicken (I used 99% lean)
2 tsp minced garlic
2 yellow onions, diced
1/2 cup hoisin sauce
4 Tbsp low sodium soy sauce
2 Tbsp rice wine vinegar
2 Tbsp grated fresh ginger
2 Tbsp Sriracha
2 8oz cans water chestnuts
Salt and Pepper to taste

Directions:
Heat a large pot over high heat. Add the ground chicken and cook until browned
Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger, and Sriracha. Cook until onions have become translucent
Stir in water chestnuts and season with salt and pepper as desired
Divide into 8 equal portions, putting each portion in Tupperware. Refrigerate up to 6 days or freeze up to 3 months. To serve, spoon the mixture into the center of a piece of lettuce and eat taco-style.
