Ingredients:
2 servings Minute Brown Rice and Quinoa
1 package Trader Joe's grilled chicken
1 small bell pepper, diced
1 cup shredded carrots
1 English cucumber, diced
1 cup cherry tomatoes, diced
1/2 small red onion, diced
Juice and zest from 1/2 lemon
2 cloves garlic, minced
2 Tbsp olive oil
1 tsp salt
1 tsp pepper
8 Tbsp crumbled feta cheese
Directions:
Remove lid from rice containers and microwave on high for 2 minutes
Add chicken, pepper, carrots, tomato, cucumber, and onion to a large bowl
Add rice/quinoa mixture to the bowl and stir until well mixed
In a small dish, mix lemon juice, lemon zest, olive oil, garlic, salt, and pepper
Pour dressing over chicken mixture and stir until evenly coated
Divide into 4 even portions and top each with 2 Tbsp feta cheese
